- 1 cup stone-ground grits
- 4 cups water or milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 tablespoons butter
- 1/2 cup shredded cheddar cheese
- 1/4 cup heavy cream
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon jerk seasoning
- 1/4 teaspoon thyme
- 1/4 cup chopped fresh parsley
Instructions
- Cook the grits: In a medium saucepan, bring water or milk, salt, and pepper to a boil. Gradually whisk in the grits. Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally, until tender and creamy.
- Stir in butter, cheddar cheese, and heavy cream until smooth. Keep warm.
- Cook the shrimp: While the grits are cooking, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- Sauté aromatics: Add onion to the same skillet and cook until softened, about 5 minutes. Add garlic, jerk seasoning, and thyme and cook for 1 minute more until fragrant.
- Combine: Return the shrimp to the skillet. Stir to coat with the onion mixture.
- Serve: Spoon the creamy grits into bowls. Top with the Jamaican shrimp mixture. Garnish with fresh parsley.
Notes
- For a spicier dish, add a pinch of cayenne pepper to the shrimp mixture.
- You can substitute quick-cooking grits, but adjust cooking time according to package directions.
