Ingredients

- 1 pound cheese tortellini
- 1 cup pesto
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped sun-dried tomatoes
- 1/2 cup fresh mozzarella balls, halved or quartered
- Salt and black pepper to taste
Instructions
- Cook tortellini according to package directions. Drain and rinse with cold water.
- In a large bowl, combine pesto, mayonnaise, and Parmesan cheese.
- Add the cooled tortellini, sun-dried tomatoes, and fresh mozzarella to the bowl.
- Gently toss to coat everything evenly with the pesto mixture.
- Season with salt and black pepper to taste.
- Chill for at least 30 minutes before serving.
Notes
- You can add other vegetables like cherry tomatoes, bell peppers, or olives.
- Grilled chicken or shrimp can be added for a heartier salad.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
