Ingredients

  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 2 celery stalks, chopped
  • 2 carrots, peeled and diced
  • 1/4 cup all-purpose flour
  • 4 cups fish or vegetable broth
  • 2 cups milk
  • 1 pound mixed seafood (cod, shrimp, clams), cut into bite-sized pieces
  • 1 cup diced potatoes
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried thyme

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, celery, and carrots. Cook until softened, about 5 minutes.
  3. Stir in flour and cook for 1 minute.
  4. Gradually whisk in the broth until smooth.
  5. Add milk and potatoes. Bring to a simmer and cook until potatoes are tender, about 10 minutes.
  6. Add the mixed seafood, salt, pepper, and thyme. Cook until the seafood is opaque and cooked through, about 5 to 7 minutes.
  7. Stir in the heavy cream. Heat through but do not boil.
  8. Serve hot.

Notes

  • For a thicker chowder, simmer uncovered for a few extra minutes before adding the cream.
  • You can substitute frozen mixed seafood for fresh.
