Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium yellow onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • 1 (16 ounce) package potato gnocchi
  • 1/2 cup heavy cream
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
  3. Add onion, carrots, and celery to the pot. Cook until softened, about 5 minutes.
  4. Stir in garlic and cook for 1 minute until fragrant.
  5. Pour in chicken broth. Add thyme, rosemary, and bay leaf. Bring the mixture to a boil.
  6. Reduce heat and simmer for 10 minutes.
  7. Return the cooked chicken to the pot. Add the gnocchi and cook according to package directions, usually 3-5 minutes, until they float.
  8. Remove the bay leaf. Stir in heavy cream, lemon juice, and lemon zest. Heat through gently; do not boil after adding cream.
  9. Season with salt and pepper to your preference.
  10. Ladle soup into bowls and garnish with fresh parsley.

Notes

  • For a thicker soup, you can remove about 1 cup of the broth and vegetables before adding the cream, blend it until smooth, and then stir it back into the soup.
  • You can substitute pre-cooked rotisserie chicken for the raw chicken to save time.
