- 1 pound ground beef
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 8 flour tortillas (8-inch)
- Vegetable oil for frying
Instructions
- In a large skillet, cook ground beef and onion over medium heat until beef is browned and onion is tender. Drain off excess fat.
- Stir in garlic, chili powder, cumin, salt, and pepper. Cook for 1 minute more.
- Remove from heat and stir in cheddar cheese.
- Warm tortillas according to package directions to make them pliable.
- Spoon about 1/2 cup of the beef mixture onto the center of each tortilla.
- Fold in opposite sides of the tortilla, then fold up the bottom and top to form a rectangular package. Secure with toothpicks if needed.
- Heat 1 inch of vegetable oil in a large skillet or Dutch oven to 350°F (175°C).
- Carefully place chimichangas seam-side down into the hot oil. Fry for 2-3 minutes per side, or until golden brown and crispy.
- Remove chimichangas from oil and place on a wire rack lined with paper towels to drain excess oil.
- Serve hot with your favorite toppings like salsa, sour cream, or guacamole.
Notes
- Do not overfill the tortillas, or they will be difficult to fold and seal.
- Ensure the oil is at the correct temperature for even cooking and crispiness.
- You can bake these instead of frying for a healthier option. Bake at 400°F (200°C) for 15-20 minutes, or until golden.
