Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/2 tsp dried Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the bottom of a slow cooker.
  2. Sprinkle with salt, pepper, and Italian seasoning.
  3. Add minced garlic and chopped sun-dried tomatoes over the chicken.
  4. Pour heavy cream over everything.
  5. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until chicken is cooked through and tender.
  6. Remove chicken from the slow cooker and shred it using two forks. Return shredded chicken to the slow cooker.
  7. Stir in fresh spinach and grated Parmesan cheese.
  8. Cover and cook for an additional 15-20 minutes, or until spinach is wilted and cheese is melted.
  9. Serve hot.
