Description

Easy crockpot recipe for tender beef sandwiches with savory au jus.


Ingredients

  • 1 (2 1/2 pound) beef chuck roast
  • 1 (10.5 ounce) can condensed beef broth
  • 1 (10.5 ounce) can condensed French onion soup
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 6 hoagie rolls
  • Provolone cheese slices (optional)

Instructions

  1. Place chuck roast in a slow cooker.
  2. Pour beef broth and French onion soup over the roast.
  3. Sprinkle thyme, rosemary, and pepper over the roast.
  4. Cover and cook on low for 8-10 hours, or until beef is tender and shreds easily.
  5. Remove beef from slow cooker and shred using two forks.
  6. Return shredded beef to the slow cooker and stir into the juices.
  7. Serve beef on hoagie rolls.
  8. Dip sandwiches in the cooking liquid (au jus).
  9. Top with provolone cheese if desired.

Notes

  • You can sear the roast in a hot pan before placing it in the slow cooker for added flavor.
