- 3 cups cooked chicken, shredded
- 1/2 cup sliced almonds, toasted
- 1/4 cup sesame seeds, toasted

- 1/4 cup chopped green onions
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 6 cups mixed salad greens
- 1 cup shredded carrots
- 1/2 cup sliced bell peppers (any color)
- 1/2 cup edamame (shelled)
Instructions
- In a large bowl, combine shredded chicken, toasted almonds, toasted sesame seeds, cilantro, and green onions.
- In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, garlic powder, salt, and pepper to create the dressing.
- Pour the dressing over the chicken mixture and toss to coat evenly.
- In a separate large bowl, combine mixed greens, shredded carrots, sliced bell peppers, and edamame.
- Add the chicken mixture to the salad greens and toss gently to combine.
- Serve immediately.
Notes
- You can use leftover cooked chicken or rotisserie chicken for this recipe.
- Adjust the amount of dressing to your preference.
- Add other vegetables like cucumber or snap peas for extra crunch.
- For a spicier salad, add a pinch of red pepper flakes to the dressing.
