Ingredients

- 1 cup fresh lemon juice
- 1/2 cup simple syrup
- 1/2 cup thinly sliced cucumber
- 1/4 cup fresh mint leaves
- 2 cups sparkling water
- Ice cubes
Instructions
- In a pitcher, combine lemon juice, simple syrup, sliced cucumber, and mint leaves.
- Muddle the cucumber and mint gently to release their flavors.
- Let the mixture steep for at least 15 minutes in the refrigerator.
- Strain the mixture into a serving pitcher, discarding the solids.
- Add sparkling water and stir gently.
- Serve over ice. Garnish with extra cucumber slices and mint sprigs if desired.
Notes
- For a sweeter drink, add more simple syrup to taste.
- For a less sweet drink, reduce the amount of simple syrup or omit it.
- You can make simple syrup by heating equal parts sugar and water until the sugar dissolves, then letting it cool.
