Description

A simple recipe for a smoky and slightly spicy dairy-free dressing using chipotle peppers.


Ingredients

Scale
  • 1 cup raw cashews, soaked for at least 2 hours
  • 1/2 cup water
  • 2 tablespoons lime juice
  • 12 canned chipotle peppers in adobo sauce (adjust to heat preference)
  • 1 teaspoon adobo sauce from the can
  • 1 clove garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Drain and rinse the soaked cashews.
  2. Place the drained cashews, water, lime juice, chipotle peppers, adobo sauce, garlic, salt, and pepper into a high-speed blender.
  3. Blend on high until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
  4. If the dressing is too thick, add water, one tablespoon at a time, until you reach your desired consistency.
  5. Taste and adjust salt or chipotle for flavor preference.
  6. Transfer the dressing to an airtight container and refrigerate.

Notes

  • Soaking the cashews is necessary for a smooth texture. If you forget to soak them, cover them with boiling water for 15 minutes instead.
  • This dressing thickens slightly when chilled.
