Ingredients

  • 1 pre-made 9-inch chocolate pie crust
  • 1 cup heavy cream
  • 8 ounces bittersweet chocolate, chopped
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs, separated

Instructions

  1. Melt the chopped chocolate in a heatproof bowl set over simmering water, stirring until smooth. Remove from heat and let cool slightly.
  2. In a separate bowl, whip the heavy cream until soft peaks form. Set aside.
  3. In a medium bowl, whisk the egg yolks and sugar until pale and thick. Stir the slightly cooled melted chocolate into the yolk mixture. Add the vanilla extract.
  4. In a clean, dry bowl, beat the egg whites until stiff peaks form.
  5. Gently fold one-third of the whipped cream into the chocolate mixture to lighten it. Then, gently fold in the remaining whipped cream.
  6. Carefully fold in the stiff egg whites until just combined, being careful not to deflate the mixture.
  7. Pour the mousse into the prepared pie crust.
  8. Chill the pie in the refrigerator for at least 4 hours, or until firm.

Notes

  • For a firmer mousse, you can chill the pie overnight.
  • Garnish with fresh berries or a dusting of cocoa powder before serving.
