- 1 pre-made 9-inch chocolate pie crust
- 1 cup heavy cream
- 8 ounces bittersweet chocolate, chopped
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs, separated
Instructions
- Melt the chopped chocolate in a heatproof bowl set over simmering water, stirring until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whip the heavy cream until soft peaks form. Set aside.
- In a medium bowl, whisk the egg yolks and sugar until pale and thick. Stir the slightly cooled melted chocolate into the yolk mixture. Add the vanilla extract.
- In a clean, dry bowl, beat the egg whites until stiff peaks form.
- Gently fold one-third of the whipped cream into the chocolate mixture to lighten it. Then, gently fold in the remaining whipped cream.
- Carefully fold in the stiff egg whites until just combined, being careful not to deflate the mixture.
- Pour the mousse into the prepared pie crust.
- Chill the pie in the refrigerator for at least 4 hours, or until firm.
Notes
- For a firmer mousse, you can chill the pie overnight.
- Garnish with fresh berries or a dusting of cocoa powder before serving.
