- 1 (16 ounce) bag coleslaw mix
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1/2 teaspoon sriracha (optional)
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- Cook the ground pork in a large skillet over medium-high heat until browned. Drain off any excess grease.
- Add the olive oil, chopped onion, minced garlic, and grated ginger to the skillet. Cook until the onion is softened, about 5 minutes.
- Stir in the coleslaw mix and cook until it begins to wilt, about 3-5 minutes.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and sriracha (if using).
- Pour the sauce over the ingredients in the skillet and stir to combine. Cook for another 2-3 minutes until heated through.
- Serve the egg roll in a bowl topped with sliced green onions and sesame seeds.
Notes
- For a vegetarian option, use crumbled firm tofu or plant-based ground instead of pork.
- Adjust sriracha to your spice preference.
- Serve with brown rice or cauliflower rice for a complete meal.
