  • 1 tablespoon sesame oil
  • 1 cup shredded carrots
  • 1 cup coleslaw mix (shredded cabbage and carrots)
  • 4 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (optional)

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the ground pork or chicken to the skillet. Cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add the minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant.
  4. Stir in the shredded carrots and coleslaw mix. Cook for 3 to 5 minutes until the vegetables begin to soften.
  5. Pour in the soy sauce, rice vinegar, and sriracha, if using. Stir well to coat all ingredients.
  6. Cook for 2 more minutes, allowing the sauce to reduce slightly.
  7. Remove from heat. Stir in the sliced green onions.
  8. Divide the mixture into bowls and serve immediately.
