Description

A simple recipe for flavorful garlic chicken mixed with rotini pasta.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 pound rotini pasta
  • 4 tablespoons olive oil, divided
  • 6 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Cook rotini pasta according to package directions. Drain and set aside.
  2. Season chicken pieces with salt, pepper, and Italian seasoning.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from the skillet and set aside.
  4. Reduce heat to medium. Add the remaining 2 tablespoons of olive oil to the skillet. Add minced garlic and cook for about 1 minute until fragrant; do not burn.
  5. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  6. Stir in heavy cream and continue to simmer for 2 minutes until slightly thickened.
  7. Remove the skillet from the heat. Stir in Parmesan cheese until the sauce is smooth.
  8. Return the cooked chicken to the skillet. Add the cooked rotini pasta. Toss everything together until the pasta and chicken are coated in the sauce.
  9. Stir in fresh parsley. Taste and adjust seasoning if needed. Serve immediately.

Notes

  • For a lighter sauce, substitute half-and-half for heavy cream.
  • You can add 1 cup of fresh spinach with the chicken broth for added greens.
