A simple recipe for zucchini boats filled with seasoned ground turkey and taco flavors.

- 3 medium zucchini
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 small onion, chopped
- 1 packet taco seasoning mix
- 1/2 cup water
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375 degrees Fahrenheit.
- Cut the zucchini in half lengthwise and scoop out the seeds and flesh, leaving about a 1/4-inch shell. Chop the removed zucchini flesh.
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
- Add the ground turkey to the skillet and cook, breaking it up, until browned. Drain any excess fat.
- Stir in the taco seasoning mix, chopped zucchini flesh, and water. Simmer for 5 minutes until the liquid reduces slightly.
- Spoon the turkey mixture evenly into the hollowed-out zucchini shells.
- Place the stuffed zucchini boats on a baking sheet.
- Bake for 20 minutes.
- Sprinkle the shredded cheese over the tops and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Notes
- You can substitute ground beef for ground turkey if desired.
- Serve immediately after removing from the oven.
