- 1 pound carrots, peeled and cut into uniform pieces
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 3 tablespoons honey
- 1 tablespoon soy sauce
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a large bowl, toss the carrots with olive oil, minced garlic, salt, and pepper until evenly coated.
- Spread the carrots in a single layer on a baking sheet.
- Roast for 20 minutes.
- In a small bowl, whisk together the honey and soy sauce.
- Remove the carrots from the oven and drizzle the honey-soy mixture over them. Toss gently to coat.
- Return the carrots to the oven and roast for another 5 to 10 minutes, or until tender and slightly caramelized.
- Serve immediately.
Notes
- For extra flavor, sprinkle with fresh parsley before serving.
- Cut carrots into similar sizes for even cooking.
