Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. In a large bowl, toss the carrots with olive oil, minced garlic, salt, and pepper until evenly coated.
  3. Spread the carrots in a single layer on a baking sheet.
  4. Roast for 20 minutes.
  5. In a small bowl, whisk together the honey and soy sauce.
  6. Remove the carrots from the oven and drizzle the honey-soy mixture over them. Toss gently to coat.
  7. Return the carrots to the oven and roast for another 5 to 10 minutes, or until tender and slightly caramelized.
