Description

A simple, low-carbohydrate casserole made with ground beef and zucchini.


Ingredients

  • 1.5 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium zucchini, sliced
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
  3. Add chopped onion and minced garlic to the skillet. Cook until the onion softens, about 5 minutes.
  4. Stir in the drained diced tomatoes, oregano, salt, and pepper. Cook for 2 minutes.
  5. In a bowl, mix the cooked beef mixture with the sliced zucchini and heavy cream.
  6. Transfer the mixture to the prepared baking dish.
  7. Sprinkle the shredded cheddar cheese evenly over the top.
  8. Bake for 25 to 30 minutes, or until the cheese is melted and bubbly and the zucchini is tender.

Notes

  • You can substitute ground turkey for ground beef if desired.
  • For extra flavor, add 1/2 teaspoon of Italian seasoning with the oregano.
