Ingredients

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1/2 cup chopped red onion
  • 1/2 cup chopped celery
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons white miso paste
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon sugar
  • 1/4 teaspoon black pepper

Instructions

  1. Combine the rinsed and drained black beans and cannellini beans in a large bowl.
  2. Add the chopped red onion, celery, and cilantro to the beans.
  3. In a small bowl, whisk together the miso paste, sesame oil, rice vinegar, grated ginger, minced garlic, sugar, and black pepper until smooth. This is your dressing.
  4. Pour the dressing over the bean mixture.
  5. Gently toss all ingredients until the beans and vegetables are evenly coated with the dressing.
  6. Cover the bowl and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

  • For a denser texture, lightly mash about one-quarter of the beans before mixing with the dressing.
  • You can substitute white miso with yellow miso for a slightly stronger flavor.
