Description

A simple recipe for hearty pinto bean soup suitable for a cozy evening.


Ingredients

  • 1 pound dried pinto beans, soaked overnight and drained
  • 6 cups chicken or vegetable broth
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1 bay leaf
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions

  1. Rinse the soaked and drained pinto beans.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
  3. Add the minced garlic, oregano, and cumin. Cook for 1 minute more until fragrant.
  4. Add the rinsed pinto beans, broth, and bay leaf to the pot.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the beans are tender.
  6. Remove the bay leaf. Season the soup with salt and pepper to your preference.
  7. For a thicker soup, mash about 1 cup of the beans against the side of the pot with a spoon, then stir them back in.

Notes

  • For a smoky flavor, add 1/2 teaspoon of smoked paprika with the other spices.
  • Serve with a drizzle of olive oil or a squeeze of fresh lime juice.
