Ingredients

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup cooked white rice
- 1 cup vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat the olive oil in a medium saucepan over medium heat.
- Add the chopped onion and cook until soft, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the rinsed black beans, cooked rice, vegetable broth, cumin, and oregano to the saucepan.
- Bring the mixture to a simmer.
- Reduce heat to low, cover, and cook for 15 minutes, allowing flavors to blend.
- Season with salt and pepper to your taste.
- Serve hot.
Notes
- For extra flavor, add a dash of hot sauce before serving.
- You can substitute black beans with kidney beans or pinto beans.
