- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 cup cooked quinoa
- 1/2 cup crumbled feta cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and black pepper to taste
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
- Heat the olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it up as it cooks. Drain any excess fat.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the diced tomatoes, squeezed spinach, cooked quinoa, feta cheese, oregano, and basil to the skillet. Season with salt and pepper. Mix well.
- Transfer the turkey mixture to the prepared baking dish.
- Sprinkle the mozzarella cheese evenly over the top.
- Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
Notes
- You can substitute ground chicken or ground beef for the turkey if you prefer.
- For a richer flavor, use sun-dried tomatoes instead of fresh diced tomatoes.
