A simple recipe for a savory turkey and vegetable casserole with Mediterranean flavors.


Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup cooked quinoa
  • 1/2 cup crumbled feta cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and black pepper to taste
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it up as it cooks. Drain any excess fat.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in the minced garlic and cook for 1 minute more until fragrant.
  5. Add the diced tomatoes, squeezed spinach, cooked quinoa, feta cheese, oregano, and basil to the skillet. Season with salt and pepper. Mix well.
  6. Transfer the turkey mixture to the prepared baking dish.
  7. Sprinkle the mozzarella cheese evenly over the top.
  8. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.

Notes

  • You can substitute ground chicken or ground beef for the turkey if you prefer.
  • For a richer flavor, use sun-dried tomatoes instead of fresh diced tomatoes.
