Delicious Vegan Meatloaf for Cozy Dinners

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked brown or green lentils
  • 1 cup breadcrumbs (panko or regular)
  • 1/2 cup vegetable broth
  • 1/4 cup ketchup or tomato paste
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon ground flaxseed mixed with 3 tablespoons water (flax egg)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • Salt and black pepper to taste
  • For the glaze: 1/4 cup ketchup, 1 tablespoon maple syrup, 1 teaspoon apple cider vinegar

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a standard loaf pan.
  2. Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes. Add the minced garlic and cook for 1 minute more.
  3. In a large bowl, combine the cooked lentils, breadcrumbs, vegetable broth, 1/4 cup ketchup or tomato paste, soy sauce, flax egg mixture, thyme, and sage.
  4. Add the cooked onion and garlic mixture to the bowl. Mix everything thoroughly until just combined. Do not overmix. Season with salt and pepper.
  5. Transfer the mixture to the prepared loaf pan and press it down lightly to form a loaf shape.
  6. In a small bowl, whisk together the glaze ingredients: 1/4 cup ketchup, maple syrup, and apple cider vinegar. Spread half of the glaze over the top of the meatloaf.
  7. Bake for 30 minutes. Remove from the oven, spread the remaining glaze over the top, and return to the oven.
  8. Bake for another 15 to 20 minutes, or until the glaze is set and the loaf is firm.
  9. Let the meatloaf rest in the pan for 10 minutes before slicing and serving.

Notes

  • You can substitute walnuts or mushrooms for some of the lentils for varied texture.
  • For a gluten-free option, use gluten-free breadcrumbs.
