A simple recipe for a satisfying vegan meatloaf suitable for a comforting meal.

- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked brown or green lentils
- 1 cup breadcrumbs (panko or regular)
- 1/2 cup vegetable broth
- 1/4 cup ketchup or tomato paste
- 2 tablespoons soy sauce or tamari
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water (flax egg)
- 1 teaspoon dried thyme
- 1/2 teaspoon dried sage
- Salt and black pepper to taste
- For the glaze: 1/4 cup ketchup, 1 tablespoon maple syrup, 1 teaspoon apple cider vinegar
Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a standard loaf pan.
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes. Add the minced garlic and cook for 1 minute more.
- In a large bowl, combine the cooked lentils, breadcrumbs, vegetable broth, 1/4 cup ketchup or tomato paste, soy sauce, flax egg mixture, thyme, and sage.
- Add the cooked onion and garlic mixture to the bowl. Mix everything thoroughly until just combined. Do not overmix. Season with salt and pepper.
- Transfer the mixture to the prepared loaf pan and press it down lightly to form a loaf shape.
- In a small bowl, whisk together the glaze ingredients: 1/4 cup ketchup, maple syrup, and apple cider vinegar. Spread half of the glaze over the top of the meatloaf.
- Bake for 30 minutes. Remove from the oven, spread the remaining glaze over the top, and return to the oven.
- Bake for another 15 to 20 minutes, or until the glaze is set and the loaf is firm.
- Let the meatloaf rest in the pan for 10 minutes before slicing and serving.
Notes
- You can substitute walnuts or mushrooms for some of the lentils for varied texture.
- For a gluten-free option, use gluten-free breadcrumbs.
