Ingredients

- 2 Honeycrisp apples, cored and sliced
- 4 cups mixed greens
- 1/2 cup toasted pecans
- 1/4 cup crumbled blue cheese
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- Wash and slice the apples.
- In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, and honey. Season with salt and pepper.
- In a large bowl, combine the mixed greens, sliced apples, toasted pecans, and blue cheese.
- Pour the dressing over the salad ingredients.
- Toss gently to coat everything evenly.
- Serve immediately.

- Toast pecans in a dry skillet over medium heat for 3-5 minutes until fragrant.
- Substitute goat cheese for blue cheese if preferred.
