  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons fresh lemon juice
  • 1/2 teaspoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a donut pan or line with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a small bowl, whisk together the buttermilk, lemon juice, and lemon zest.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  7. Spoon or pipe the batter into the prepared donut pan, filling each cavity about two-thirds full.
  8. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  10. While the donuts are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth. Add more lemon juice if needed to reach your desired consistency.
  11. Once the donuts are completely cool, dip the tops into the glaze or drizzle it over them. Let the glaze set before serving.
