- 1/2 cup chopped celery
- 1/4 cup chopped red onion
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice

Instructions
- In a medium bowl, combine the rinsed chickpeas, celery, and red onion.
- In a small bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice.
- Pour the dressing over the chickpea mixture.
- Stir gently until everything is coated.
- Season with salt and pepper to your preference.
- Serve immediately or chill before serving.
Notes
- For a different texture, lightly mash about one-third of the chickpeas before mixing.
- You can substitute plain Greek yogurt for half of the mayonnaise for a lighter dressing.
