Description
A simple recipe for cooking chicken and asparagus together on one pan using a balsamic glaze.
Ingredients
Scale
- 1.5 lb boneless, skinless chicken breasts
- 1 lb fresh asparagus, trimmed
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon brown sugar
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper.
- In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, brown sugar, Italian seasoning, salt, and pepper to make the glaze.
- Place the chicken breasts on one side of the prepared baking sheet. Brush half of the balsamic glaze over the chicken.
- Arrange the trimmed asparagus on the other side of the baking sheet. Drizzle the remaining glaze over the asparagus.
- Bake for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius) and the asparagus is tender-crisp.
- Remove from the oven and serve immediately.
Notes
- You can substitute chicken thighs for breasts if desired; adjust cooking time as needed.
- If your asparagus spears are very thick, blanch them briefly in boiling water before roasting to ensure even cooking.
