Description

A simple recipe for cooking chicken and asparagus together on one pan using a balsamic glaze.


Ingredients

  • 1.5 lb boneless, skinless chicken breasts
  • 1 lb fresh asparagus, trimmed
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper.
  2. In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, brown sugar, Italian seasoning, salt, and pepper to make the glaze.
  3. Place the chicken breasts on one side of the prepared baking sheet. Brush half of the balsamic glaze over the chicken.
  4. Arrange the trimmed asparagus on the other side of the baking sheet. Drizzle the remaining glaze over the asparagus.
  5. Bake for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius) and the asparagus is tender-crisp.
  6. Remove from the oven and serve immediately.

Notes

  • You can substitute chicken thighs for breasts if desired; adjust cooking time as needed.
  • If your asparagus spears are very thick, blanch them briefly in boiling water before roasting to ensure even cooking.
