Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of ground cloves
  • For topping: cranberry sauce and whipped cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of the prepared pan to form a crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Beat in vanilla extract.
  4. Add eggs one at a time, beating well after each addition.
  5. In a separate small bowl, whisk together sour cream, flour, cinnamon, nutmeg, and cloves.
  6. Add sour cream mixture to cream cheese mixture and beat until just combined. Do not overmix.
  7. Pour filling over the crust in the springform pan.
  8. Bake for 50-60 minutes, or until the center is almost set.
  9. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  10. Remove cheesecake from oven and cool completely on a wire rack.
  11. Refrigerate for at least 4 hours, or preferably overnight, before serving.
  12. Serve with cranberry sauce and whipped cream.
