Ingredients

  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 1/4 cups water
  • 1 can (12 oz) evaporated milk
  • 1 1/2 cups granulated sugar
  • 3/4 cup butter, cubed
  • 4 egg yolks, beaten
  • 1 teaspoon vanilla extract
  • 1 1/3 cups flaked coconut
  • 1 cup chopped pecans

Instructions

  1. Prepare and bake cake mix according to package directions for a 13×9 inch pan. Let cool completely.
  2. In a large saucepan, combine evaporated milk, sugar, butter, and egg yolks. Cook and stir over medium heat until thickened, about 10-12 minutes. Remove from heat.
  3. Stir in vanilla extract, coconut, and pecans.
  4. Spread warm frosting over cooled cake.
  5. Let frosting set before slicing.
