Description
A rich cheesecake flavored with eggnog and coffee, suitable for holidays.
Ingredients
Scale
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup eggnog
- 1/4 cup strong brewed coffee, cooled
- 2 large eggs
- 1 teaspoon vanilla extract
- Pinch of ground nutmeg for topping
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Wrap the outside of a 9-inch springform pan with heavy-duty aluminum foil.
- Combine graham cracker crumbs and 1/4 cup sugar in a bowl. Pour in melted butter and mix until combined. Press the mixture firmly into the bottom of the prepared springform pan.
- Bake the crust for 10 minutes. Remove from the oven and let it cool slightly. Reduce oven temperature to 325 degrees F (160 degrees C).
- In a large bowl, beat the softened cream cheese with 1 cup sugar until smooth.
- Beat in the eggnog and cooled coffee until just combined. Mix in the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Pour the batter over the cooled crust.
- Place the springform pan into a larger roasting pan. Carefully pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan (this is a water bath).
- Bake for 50 to 60 minutes, or until the edges are set and the center has a slight jiggle.
- Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
- Remove the cheesecake from the water bath and let it cool completely on a wire rack.
- Chill the cheesecake in the refrigerator for at least 4 hours, or preferably overnight, before serving.
- Before serving, sprinkle the top lightly with ground nutmeg.
Notes
- Use strong, cooled espresso or very strong brewed coffee for the best flavor.
- If you do not want to use a water bath, bake the cheesecake at 325 degrees F for about 60-70 minutes, then cool slowly in the turned-off oven with the door ajar.
