Ingredients

  • 1/2 cup ice water
  • 6 cups mixed fresh fruit (berries, apples, peaches), sliced
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 egg, beaten, for egg wash

Instructions

  1. In a large bowl, whisk together flour and salt. Cut in cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, until the dough just comes together. Do not overmix.
  3. Divide the dough in half, flatten each half into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. In a separate bowl, combine the sliced fruit, sugar, cornstarch, lemon juice, cinnamon, and nutmeg. Toss gently to coat the fruit.
  5. Preheat oven to 375°F (190°C).
  6. On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie plate. Carefully transfer the dough to the pie plate.
  7. Pour the fruit filling into the pie crust.
  8. Roll out the second disk of dough for the top crust. You can make a solid top crust, a lattice top, or cut out shapes. Place the top crust over the filling.
  9. Trim any excess dough and crimp the edges to seal. Cut vents in the top crust to allow steam to escape.
  10. Brush the top crust with the beaten egg wash.
  11. Bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.
  12. Let the pie cool completely on a wire rack before slicing and serving.

Notes

  • For best results, use a mix of sweet and tart fruits.
  • You can use frozen fruit, but thaw and drain it first.
  • If the crust starts to brown too quickly, cover the edges with foil.
