A sweet and flavorful fruit pie with a flaky crust.

- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup cold unsalted butter, cut into cubes
- 1/2 cup ice water
- 6 cups mixed fresh fruit (berries, apples, peaches), sliced
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 egg, beaten, for egg wash
Instructions
- In a large bowl, whisk together flour and salt. Cut in cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, until the dough just comes together. Do not overmix.
- Divide the dough in half, flatten each half into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- In a separate bowl, combine the sliced fruit, sugar, cornstarch, lemon juice, cinnamon, and nutmeg. Toss gently to coat the fruit.
- Preheat oven to 375°F (190°C).
- On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie plate. Carefully transfer the dough to the pie plate.
- Pour the fruit filling into the pie crust.
- Roll out the second disk of dough for the top crust. You can make a solid top crust, a lattice top, or cut out shapes. Place the top crust over the filling.
- Trim any excess dough and crimp the edges to seal. Cut vents in the top crust to allow steam to escape.
- Brush the top crust with the beaten egg wash.
- Bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.
- Let the pie cool completely on a wire rack before slicing and serving.
Notes
- For best results, use a mix of sweet and tart fruits.
- You can use frozen fruit, but thaw and drain it first.
- If the crust starts to brown too quickly, cover the edges with foil.
