A simple soup recipe that captures the taste of stuffed peppers.
Ingredients

- 1 tablespoon olive oil
- 1 pound ground beef or turkey
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 4 cups beef broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked white rice
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add ground meat and cook until browned. Drain excess fat.
- Add onion, garlic, green pepper, and red pepper to the pot. Cook until vegetables soften, about 5 to 7 minutes.
- Stir in crushed tomatoes, tomato sauce, beef broth, oregano, basil, salt, and pepper. Bring the mixture to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes.
- Stir in cooked rice during the last 5 minutes of simmering.
- Taste and adjust seasoning if needed before serving.
Notes
- For a vegetarian option, substitute the ground meat with lentils or mushrooms.
- You can use any color of bell pepper you prefer.
