Flavorful Taco Stuffed Peppers

Description

A simple recipe for bell peppers filled with seasoned ground meat and taco flavors, baked until tender.


Ingredients

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground beef or turkey
  • 1 medium onion, chopped
  • 1 packet (about 1 ounce) taco seasoning mix
  • 1 cup water
  • 1 (15 ounce) can tomato sauce, divided
  • 1 cup cooked rice
  • 1 cup shredded cheddar or Mexican blend cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
  2. Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves cut-side up in the prepared baking dish.
  3. Heat the olive oil in a large skillet over medium heat. Add the ground meat and onion. Cook until the meat is browned and the onion is soft. Drain any excess grease.
  4. Stir in the taco seasoning, water, and half of the tomato sauce. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  5. Remove the skillet from the heat. Stir in the cooked rice.
  6. Spoon the meat and rice mixture evenly into the bell pepper halves.
  7. Pour the remaining half of the tomato sauce over and around the stuffed peppers in the baking dish.
  8. Cover the baking dish with foil and bake for 30 minutes.
  9. Remove the foil. Sprinkle the cheese over the top of each pepper.
  10. Return the dish to the oven, uncovered, and bake for another 10 to 15 minutes, or until the peppers are tender and the cheese is melted and bubbly.

Notes

  • You can substitute ground turkey or chicken for ground beef.
  • For a spicier filling, add a pinch of cayenne pepper or a chopped jalapeño with the onion.
  • Serve with your favorite taco toppings like sour cream or salsa.
