Description
A simple recipe for bell peppers filled with seasoned ground meat and taco flavors, baked until tender.

- 4 large bell peppers (any color)
- 1 tablespoon olive oil
- 1 pound ground beef or turkey
- 1 medium onion, chopped
- 1 packet (about 1 ounce) taco seasoning mix
- 1 cup water
- 1 (15 ounce) can tomato sauce, divided
- 1 cup cooked rice
- 1 cup shredded cheddar or Mexican blend cheese
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
- Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves cut-side up in the prepared baking dish.
- Heat the olive oil in a large skillet over medium heat. Add the ground meat and onion. Cook until the meat is browned and the onion is soft. Drain any excess grease.
- Stir in the taco seasoning, water, and half of the tomato sauce. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Remove the skillet from the heat. Stir in the cooked rice.
- Spoon the meat and rice mixture evenly into the bell pepper halves.
- Pour the remaining half of the tomato sauce over and around the stuffed peppers in the baking dish.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil. Sprinkle the cheese over the top of each pepper.
- Return the dish to the oven, uncovered, and bake for another 10 to 15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
Notes
- You can substitute ground turkey or chicken for ground beef.
- For a spicier filling, add a pinch of cayenne pepper or a chopped jalapeño with the onion.
- Serve with your favorite taco toppings like sour cream or salsa.
