- 1 pound sweet potatoes, peeled and diced
- 1/2 red onion, chopped
- 1 red bell pepper, chopped
- 1 jalapeño, seeded and minced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- Salt to taste
- Black pepper to taste
- Optional toppings: avocado, cilantro, lime wedges, fried eggs
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until they begin to soften.
- Add chopped red onion, red bell pepper, and minced jalapeño to the skillet. Cook for another 5-7 minutes, until vegetables are tender-crisp.
- Stir in minced garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute until fragrant.
- Season with salt and black pepper to taste.
- Continue cooking for 2-3 minutes, stirring to combine flavors.
- Serve hot with your favorite toppings.
Notes
- For a spicier hash, leave some seeds in the jalapeño.
- You can substitute regular potatoes for sweet potatoes if preferred.
