- 1 cup mashed sweet potato
- 1/2 cup oat flour
- 1/4 cup unsweetened plant-based milk
- 2 tablespoons maple syrup
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- Preheat your waffle iron.
- In a bowl, combine mashed sweet potato, oat flour, plant-based milk, maple syrup, baking powder, cinnamon, and salt.
- Mix until just combined. Do not overmix.
- Grease your waffle iron.
- Pour about 1/2 cup of batter onto the hot waffle iron.
- Cook according to your waffle iron’s instructions, typically 5-7 minutes, until golden brown and cooked through.
- Repeat with the remaining batter.

- Serve immediately with your favorite toppings.
- Leftover waffles can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster or oven.
