Description

Ingredients

  • 4 large eggs, separated
  • 1/2 cup cottage cheese, full fat
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon psyllium husk powder

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine the egg yolks, cottage cheese, and psyllium husk powder. Mix until smooth.
  3. In a separate, clean bowl, beat the egg whites with cream of tartar until stiff peaks form.
  4. Gently fold the egg white mixture into the cottage cheese mixture until just combined. Do not overmix.
  5. Drop spoonfuls of the batter onto the prepared baking sheet, forming small rounds.
