A low-carb, gluten-free bread alternative made with cottage cheese.
Ingredients

- 4 large eggs, separated
- 1/2 cup cottage cheese, full fat
- 1/4 teaspoon cream of tartar
- 1 tablespoon psyllium husk powder
Instructions
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a bowl, combine the egg yolks, cottage cheese, and psyllium husk powder. Mix until smooth.
- In a separate, clean bowl, beat the egg whites with cream of tartar until stiff peaks form.
- Gently fold the egg white mixture into the cottage cheese mixture until just combined. Do not overmix.
- Drop spoonfuls of the batter onto the prepared baking sheet, forming small rounds.
- Bake for 20-25 minutes, or until golden brown and firm to the touch.
- Let cool completely on the baking sheet before serving.
Notes
- Store leftover cloud bread in an airtight container in the refrigerator for up to 3 days.
- You can add a pinch of salt or your favorite herbs to the batter for extra flavor.
