Instructions

  1. Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk together egg, milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix; a few lumps are fine.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  7. Let muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.
