  • 1/4 cup Baileys Irish Cream (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1/4 cup chocolate chips (for topping)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and line a 9×9 inch baking pan with parchment paper, leaving an overhang on two sides.
  2. In a medium saucepan, melt 1 cup of butter over low heat. Remove from heat.
  3. Whisk the granulated sugar and brown sugar into the melted butter until combined.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract.
  5. In a separate bowl, whisk together the cocoa powder, flour, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Fold in 1 cup of chocolate chips.
  8. Spread the batter evenly into the prepared baking pan.
  9. Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
  10. Let the brownies cool completely in the pan on a wire rack.
  11. To make the frosting, beat the 1/2 cup softened butter until creamy.
  12. Gradually add the sifted powdered sugar, alternating with the Baileys Irish Cream and 1 teaspoon of vanilla extract. Beat until smooth and fluffy.
  13. Once the brownies are completely cool, spread the Baileys buttercream evenly over the top.
  14. Sprinkle the remaining 1/4 cup of chocolate chips over the frosting.
  15. Cut into squares before serving.
