- 2 boneless, skinless chicken breasts
- 4 slices of bread (sourdough or ciabatta recommended)
- 1 head butter lettuce, leaves separated
- 2 ripe tomatoes, sliced
- 2 tablespoons unsalted butter, softened
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped (optional)
- Salt to taste
- Black pepper to taste
- 1 tablespoon olive oil
Instructions
- In a small bowl, combine softened butter, minced garlic, and chopped parsley (if using). Mix well to create the garlic butter.
- Season chicken breasts with salt and pepper.
- Heat olive oil in a grill pan or skillet over medium-high heat. Cook chicken breasts for 5-7 minutes per side, or until cooked through and no longer pink in the center. Remove from pan and let rest for a few minutes, then slice.
- Spread a generous amount of garlic butter on one side of each slice of bread.
- Toast the bread, garlic butter side down, in the same grill pan or a separate skillet until golden brown and fragrant.
- Assemble the sandwiches: On the untoasted side of two bread slices, layer butter lettuce, sliced tomatoes, and grilled chicken slices.
- Top with the remaining two slices of bread, garlic butter side up.
- Serve immediately.
Notes
- For extra flavor, marinate the chicken in a little olive oil, lemon juice, and herbs for at least 30 minutes before grilling.
- You can use any type of bread you prefer, but a sturdy bread works best for grilling.
