Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 slices of bread (sourdough or ciabatta recommended)
  • 1 head butter lettuce, leaves separated
  • 2 ripe tomatoes, sliced
  • 2 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (optional)
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a small bowl, combine softened butter, minced garlic, and chopped parsley (if using). Mix well to create the garlic butter.
  2. Season chicken breasts with salt and pepper.
  3. Heat olive oil in a grill pan or skillet over medium-high heat. Cook chicken breasts for 5-7 minutes per side, or until cooked through and no longer pink in the center. Remove from pan and let rest for a few minutes, then slice.
  4. Spread a generous amount of garlic butter on one side of each slice of bread.
  5. Toast the bread, garlic butter side down, in the same grill pan or a separate skillet until golden brown and fragrant.
  6. Assemble the sandwiches: On the untoasted side of two bread slices, layer butter lettuce, sliced tomatoes, and grilled chicken slices.
  7. Top with the remaining two slices of bread, garlic butter side up.
  8. Serve immediately.

Notes

  • For extra flavor, marinate the chicken in a little olive oil, lemon juice, and herbs for at least 30 minutes before grilling.
  • You can use any type of bread you prefer, but a sturdy bread works best for grilling.
