Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1/2 pound pasta (fettuccine or linguine recommended)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta is cooking, heat olive oil in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add minced garlic to the same skillet and cook for 1 minute until fragrant.
  5. Pour in heavy cream, chicken broth, and Parmesan cheese. Bring to a simmer, stirring constantly.
  6. Season with salt and pepper.
  7. Return chicken to the skillet with the sauce.
  8. Add cooked pasta to the skillet and toss to coat.
  9. Garnish with fresh parsley if desired.
  10. Serve immediately.
