Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup mixed candied fruit, finely chopped
  • 1/4 cup chopped pecans
  • 1 teaspoon vanilla extract
  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/4 teaspoon almond extract (optional)

Instructions

  1. Preheat oven to 325°F (160°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the finely chopped candied fruit and pecans.
  7. Roll the dough into 1-inch balls and place them on the prepared baking sheets.
  8. Flatten each cookie slightly with the back of a fork.
  9. Bake for 15-18 minutes, or until the edges are lightly golden.
  10. Remove from oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  11. Prepare the glaze: In a small bowl, whisk together the powdered sugar, milk, and almond extract (if using) until smooth.
  12. Once cookies are completely cool, drizzle or spread the glaze over each cookie.
  13. Let the glaze set before storing.

Notes

  • Ensure butter is at room temperature for best results.
  • Do not overmix the dough to keep cookies tender.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • For a richer fruitcake flavor, you can soak the candied fruit in a tablespoon of rum or brandy for 30 minutes before adding to the dough.
