Ingredients

- 2 lbs potatoes, peeled and cut
- 1 cup mayonnaise
- 1/4 cup dill pickle juice
- 1/4 cup chopped fresh dill
- 1/4 cup chopped celery
- 1/4 cup chopped red onion
- 4 hard-boiled eggs, chopped
- Salt and pepper to taste
Instructions
- Boil potatoes until tender. Drain and let cool.
- In a large bowl, combine mayonnaise, pickle juice, dill, celery, and red onion.
- Add cooled potatoes and chopped eggs to the bowl.
- Gently mix to combine.
- Season with salt and pepper.
- Chill for at least 1 hour before serving.
Notes
- Use your favorite type of potato.
- Adjust the amount of pickle juice for desired tanginess.
- Add other vegetables like bell peppers or carrots if you like.
