A refreshing and flavorful Greek pasta salad with feta cheese, perfect for a light meal or side dish.
Ingredients

- 8 ounces penne pasta
- 1 pint cherry tomatoes, halved
- 1 large cucumber, diced
- 1 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt to taste
- Black pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, and Kalamata olives.
- Add crumbled feta cheese and chopped parsley to the bowl.
- In a small bowl, whisk together olive oil, red wine vinegar, and dried oregano.
- Pour dressing over the pasta mixture and toss gently to combine.
- Season with salt and black pepper to taste.
- Chill for at least 30 minutes before serving.
Notes
- You can add grilled chicken or shrimp for a more substantial meal.
- Bell peppers, artichoke hearts, or chickpeas can be added for extra flavor and texture.
- Prepare the dressing ahead of time for convenience.
