Grilled Charred Corn Haloumi Mango Salad

Description

A refreshing salad featuring grilled corn, charred halloumi cheese, and sweet mango.


Ingredients

  • 2 ears corn, husked
  • 8 oz halloumi cheese, sliced into 1/2 inch thick pieces
  • 1 large ripe mango, diced
  • 4 cups mixed greens
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

  1. Lightly brush the corn with olive oil and grill over medium-high heat for 8-10 minutes, turning occasionally, until kernels are slightly charred. Remove and let cool slightly. Cut kernels off the cob.
  2. Brush the halloumi slices with a little olive oil. Grill for 2-3 minutes per side until golden brown and slightly softened. Remove from heat.
  3. In a small bowl, whisk together 1 tablespoon olive oil, lime juice, honey, salt, and pepper to make the dressing.
  4. In a large bowl, combine the mixed greens, corn kernels, diced mango, and sliced red onion.
  5. Gently toss the salad with the dressing.
  6. Top the salad with the warm grilled halloumi slices before serving.

Notes

  • You can substitute feta cheese for halloumi if desired, but do not grill the feta.
  • For extra flavor, sprinkle a pinch of chili flakes over the salad.
