Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Soak wooden skewers in water for 30 minutes if using.
  2. In a medium bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper for the marinade.
  3. Add the shrimp, bell peppers, and red onion to the marinade. Toss to coat everything evenly. Let it marinate for 15 minutes.
  4. Preheat your grill to medium-high heat. Lightly oil the grill grates.
  5. Thread the marinated shrimp and vegetables onto the skewers, alternating ingredients.
  6. Place the kabobs on the preheated grill.
  7. Grill for 3 to 4 minutes per side, turning once, until the shrimp are pink and cooked through.

  • You can substitute other vegetables like zucchini or cherry tomatoes.
