Description

Quick and easy fritters with ham and zucchini.


Ingredients

  • 2 cups grated zucchini
  • 1/2 pound diced ham
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 large eggs, lightly beaten
  • 1/4 cup milk
  • 1 teaspoon baking powder
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons vegetable oil, for frying

Instructions

  1. Squeeze excess water from grated zucchini.
  2. In a large bowl, combine zucchini, ham, flour, Parmesan cheese, parsley, eggs, milk, baking powder, salt, and pepper. Mix until just combined.
  3. Heat vegetable oil in a large skillet over medium heat.
  4. Drop spoonfuls of the mixture into the hot oil, flattening slightly.
  5. Cook for 3-4 minutes per side, or until golden brown and cooked through.
  6. Remove from skillet and drain on paper towels.
  7. Serve hot.

Notes

  • You can substitute other vegetables like corn or bell peppers.
  • Serve with a dipping sauce like sour cream or ranch dressing.
