Quick and easy fritters with ham and zucchini.
Ingredients

- 2 cups grated zucchini
- 1/2 pound diced ham
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 large eggs, lightly beaten
- 1/4 cup milk
- 1 teaspoon baking powder
- Salt and freshly ground black pepper to taste
- 2 tablespoons vegetable oil, for frying
Instructions
- Squeeze excess water from grated zucchini.
- In a large bowl, combine zucchini, ham, flour, Parmesan cheese, parsley, eggs, milk, baking powder, salt, and pepper. Mix until just combined.
- Heat vegetable oil in a large skillet over medium heat.
- Drop spoonfuls of the mixture into the hot oil, flattening slightly.
- Cook for 3-4 minutes per side, or until golden brown and cooked through.
- Remove from skillet and drain on paper towels.
- Serve hot.
Notes
- You can substitute other vegetables like corn or bell peppers.
- Serve with a dipping sauce like sour cream or ranch dressing.
- Fritters can be made ahead and reheated.
