Ingredients

- 1/2 cup rolled oats
- 1/2 ripe banana
- 1 large egg
- 1/4 cup milk
- 1/2 teaspoon baking powder
- Pinch of salt
- 1 teaspoon maple syrup (optional)
- 1/2 teaspoon vanilla extract (optional)
- Cooking spray or a small amount of oil
Instructions
- Combine oats, banana, egg, milk, baking powder, and salt in a blender.
- Blend until smooth. If using, add maple syrup and vanilla extract and blend briefly.
- Heat a non-stick pan over medium heat and lightly coat with cooking spray or oil.
- Pour about 1/4 cup of batter per pancake onto the hot pan.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve immediately with your favorite toppings.
Notes
- Adjust milk for desired batter consistency.
- Use overripe bananas for more sweetness.
- Store leftover batter in the fridge for up to one day.
