  • 1 pound lean ground beef
  • 4 cups shredded cabbage
  • 1 cup shredded carrots
  • 1/2 cup chopped green onions
  • 2 cloves garlic minced
  • 1 tablespoon grated fresh ginger
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon red pepper flakes optional

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add cabbage, carrots, green onions, garlic, and ginger to the skillet. Stir-fry for 5-7 minutes, until vegetables are tender-crisp.
  4. In a small bowl, whisk together soy sauce, rice vinegar, honey, and red pepper flakes if using.
  5. Pour the sauce over the beef and vegetables. Toss to coat and cook for 1-2 minutes, until the sauce thickens slightly.
  6. Serve immediately.
