Instructions
- Combine rolled oats and milk in a bowl. Let sit for 5 minutes.
- Add egg, honey, baking powder, and cinnamon to the oat mixture. Stir until just combined.
- Gently fold in the sliced strawberries.
- Heat oil in a non-stick skillet over medium heat.
- Pour 1/4 cup of batter per pancake onto the skillet.
- Cook for 2-3 minutes per side, until golden brown.
- Serve immediately.
