Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 8 cups chicken broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 large onion, chopped
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Place chicken, broth, carrots, celery, and onion into the crockpot.
  2. Add thyme and bay leaf.
  3. Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  4. Remove chicken and shred it using two forks.
  5. Return shredded chicken to the crockpot.
  6. Stir in egg noodles and cook for an additional 20 to 30 minutes, or until noodles are tender.
  7. Remove the bay leaf before serving.
  8. Season with salt and pepper to your preference.
