A simple recipe for slow-cooked chicken soup that provides comfort.

- 2 lbs boneless, skinless chicken breasts or thighs
- 8 cups chicken broth
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 large onion, chopped
- 2 cups egg noodles
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Place chicken, broth, carrots, celery, and onion into the crockpot.
- Add thyme and bay leaf.
- Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- Remove chicken and shred it using two forks.
- Return shredded chicken to the crockpot.
- Stir in egg noodles and cook for an additional 20 to 30 minutes, or until noodles are tender.
- Remove the bay leaf before serving.
- Season with salt and pepper to your preference.
Notes
- For richer flavor, use homemade chicken broth.
- You can add other vegetables like potatoes or parsnips if desired.
