Description

Ingredients

  • 1 lb ground beef
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 cup beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil

Instructions

  1. Heat vegetable oil in a large, heavy pot or Dutch oven over medium heat.
  2. Brown the ground beef, breaking it up as it cooks. Drain off excess fat.
  3. Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables soften, about 5 to 7 minutes.
  4. Stir in the diced tomatoes, kidney beans, beef broth, salt, and pepper.
  5. Bring the stew to a simmer. Cover the pot and cook over low heat for 20 minutes, stirring occasionally, until vegetables are tender.
  6. If cooking over a campfire, place the covered pot near the edge of the coals, ensuring even, low heat. Adjust cooking time as needed for the heat source.
  7. Taste and adjust seasoning if necessary before serving.

Notes

  • For a smoky flavor, you can wrap the vegetables in foil packets and place them directly in the coals for the last 15 minutes of cooking.
