- 1 lb ground beef
- 1 large onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (15 oz) can kidney beans, rinsed and drained
- 1 cup beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon vegetable oil
Instructions
- Heat vegetable oil in a large, heavy pot or Dutch oven over medium heat.
- Brown the ground beef, breaking it up as it cooks. Drain off excess fat.
- Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables soften, about 5 to 7 minutes.
- Stir in the diced tomatoes, kidney beans, beef broth, salt, and pepper.
- Bring the stew to a simmer. Cover the pot and cook over low heat for 20 minutes, stirring occasionally, until vegetables are tender.
- If cooking over a campfire, place the covered pot near the edge of the coals, ensuring even, low heat. Adjust cooking time as needed for the heat source.
- Taste and adjust seasoning if necessary before serving.
Notes
- For a smoky flavor, you can wrap the vegetables in foil packets and place them directly in the coals for the last 15 minutes of cooking.
- You can substitute ground turkey or sausage for the ground beef.
